Our semolina is obtained by stone milling durum wheat, carefully cultivated in our fields. We take care of the entire process from sowing to milling with passion. This traditional technique preserves all the nutritional properties of the wheat, guaranteeing a high-quality product with an authentic and intense flavour.
Stone processing makes the semolina not only more nutritious and digestive, but also more fragrant. In fact, grinding the entire grain at a low processing speed reduces overheating of the millstones and thus of the flour, without affecting its natural properties.
Furthermore, grinding the entire grain of the wheat also preserves the germ. Wheat germ contains particularly valuable nutrients such as E and B vitamins, minerals such as phosphorus, potassium and magnesium, fibre and antioxidants.
In order to always have fresh flour available, we carry out small and frequent millings, so that we can offer our customers the best products.
Use it mixed with wheat or absolute flour. Ideal for fresh pasta, rustic bread, pizza and more. We recommend storing it in a cool, dry place.
Store dry, cool and protected from light, preferably in an airtight container.
